Chocolate chip cookie dough cake

Lately I've been finding a lot of cake/cookie recipes using chickpeas, and after making the black bean brownies I was not in doubt that it would taste delicious. I found this recipe on here! Amazing blog. 



INGREDIENTS
2 cans of chickpeas - cooked, drained and rinsed
2,4 dl oats
4 tbsp unsweetened applesauce
3 tbsp coconut oil
2 tsp vanilla powder
2 tsp baking powder
1 tsp baking soda
1,5 cup stevia
100g chopped dark chocolate (85%)

PROCEDURE
Mix all ingredients except chocolate in a food processor. Mix in the chocolate (they are not going to be processed!) and pour the batter into a cake tin. (Use a baking sheet or coconut oil). Bake it in the oven for 30-40 minutes on 175C. Let it cool - Enjoy!

No bake chocolate protein cake

Here's another recipe recreation from Protein-opskrifter. That dude got some serious baking skills. This cake is perfect chopped in a bowl with an apple and sprinkled with cinnamon (just saying!) - as a late night snack.



INGREDIENTS
170g avocado
35g cacao powder
15g fiber husk
55g chocolate casein protein powder (Whey protein wont work!)
40g erythritol
15g coconut flour (Superfruit)
165g coconut milk (light version)
100g greek yoghurt

PROCEDURE
Mash the avocado in a bowl - combine casein, erythritol and coconut flour. Add the wet ingredients and mix well. Pour the mass in a cake tin with a sheet. Put the cake in the fridge for a couple of hours - enjoy!

Crispy chocolate chip cookies

Lately I've been trying really hard to find a recipe for cookies that are actually crispy. I've also been experimenting with a lot of different ingredients but failed everytime. They just wont! And what is great about a cookie that isn't crispy? Nothing. But while looking around on instagram I found this girl Cecilie Lind who makes a lot of lovely protein packed yummy stuff. She had a recipe for a crispy cookie and instead of using almonds I used 85% dark chocolate to give them the "chocolate chip cookie" taste. Sure worked!


INGREDIENTS
50g vanilla whey protein (I use this one)
100g oatflour
40g dessicated coconut
40g coconut oil (melted)
40g unsweetened applesauce
30g unsweetened 85% dark chocolate

PROCEDURE
Preheat oven to 200C
Cut the chocolate into small piece and combine all ingredients in a bowl. It might seem like the dough wont stick together but when you start to form into cookies it will. The easiest is to start making them round and then press flat. Bake in oven for 8-10 minutes.
